Twice Baked Stuffed Sweet Potatoes

If you know me well enough, it’s no secret I am sweet potato obsessed, it is one of my most favorite veggies ever. I just love having them in savory dishes. Every Thanksgiving I am the one requesting or making sweet potato EVERYTHING. One of my favorite dishes around this time of year is twice baked stuffed sweet potatoes. You can make these healthy and vegan, or more of a treat with sour cream, butter, and your other go-to toppings.

(makes 4 large sweet potato halves if you choose a bigger sized sweet potato to bake with)

Ingredients:

  • 2 large yams or sweet potatoes

  • 1 bunch of green onions (chopped and set aside for toppings)

  • 4 Tbs vegan butter (or regular butter)

  • 2 tsp onion powder

  • 2 tsp garlic powder

  • salt and pepper to taste

  • 1 c of chopped yellow onion

  • 4 c of spinach

  • 1/4 c dried cranberries

  • 1/4 c unflavored almond milk (or regular milk)

Instructions:

  • Bake your sweet potato until its on the softer side and can be pierced with a for OR microwave on the potato setting

  • Once potato is cooled slice in half length wise and scoop out the middle into a medium size bowl

  • Set oven to 400 degrees

  • Mix seasonings, milk, butter in with the sweet potato stuffing

  • In a pan sauté the onions until they are translucent, add spinach and cranberries

  • Once mixture is sautéed mix into the sweet potato mixture and re-stuff the potatoes

  • Place on a baking sheet and bake for 15- 20 min until the stuffing is slightly browned and warm inside. Top with your favorite topping: green onions, cheese of any kind or sour cream. Enjoy!
