Marshmallow & Dark Chocolate Pudding (AKA Smores pudding)

File this under a recipe mistake gone beautifully right! I had a bag of marshmallows in my pantry left over from camping that were going stale. I knew I wanted to make a dessert with them. I never like to waste food, so I will always try to figure something out. I was researching the web for ideas and stumbled across a strawberry mousse recipe that called for marshmallows and heavy cream.

I started thinking about the mousse and decided I could use the Horizon milk and thicken it with my stale marshmallows to make it closer to a heavy cream-type consistency.
Fast-forward a bit to me waiting for my “mousse” to set in the refrigerator. It never did. I was going to start over but after giving it a good beating with my hand mixture it became a beautiful thick texture perfect for pudding. So there you have it. What was once a well thought out mousse became a decedent, rich, flavorful chocolate marshmallow pudding.
This pudding will last for at least a week. It would be perfect for school lunches and will cut down on plastic waste by skipping those individual pudding cups sold in stores! It took about 10 minutes to make other than the refrigeration process.
· 1 ½ cup of Horizon Organic Milk (2 small cartons will work)
· 3 - 4 C of marshmallows. I used the regular size. The more marshmallows you use the thicker it will get!
· 1 C of dark chocolate coins (you may use any chocolate you prefer!)
· Graham crackers for topping
In a medium saucepan, pour milk in and add marshmallows. Bring to a simmer/light boil until the marshmallows dissolve. Add a tiny pinch of salt and whisk mixture slowly. Keep an eye on the mix so it doesn’t boil over.
Place chocolate into a medium size bowl and pour marshmallow/milk mix over chocolate. Let it sit a minute to melt the chocolate. Use whisk to stir thoroughly. Place in refrigerator for 2 to 4 hours. Use hand beater for several minutes until consistency is pudding like. Serve and top with graham crackers.
