Creamy Vegan Alfredo Sauce
I had the pleasure of getting to meet the team over at the Silk innovation lab in Boulder Colorado a few weeks ago with the lovely Sprout Farmers Market Team. I have been a big fan of Silk non- dairy milks for a very long time, they are the true pioneers of several different plant-based products for the last 20 years. I have been dairy-free for almost 15 years now and Silk has been filling that void for as long as I can remember.
Keeping that in mind, I was very excited to learn more about the company and the mission they stand behind. One thing that I have always appreciated about Silk is that they make plant-based products that are available to all and they are very affordable. They are a leading the industry with all certified non-GMO products and they are actually passionate about it. They take great pride in the quality of products they offer to the consumers and that means the world to me.
A lot of dairy free products that are on the market are not only hard to find, but out of budget for a lot of households. Silk was the one brand I could always afford and find at my local Sprouts stores throughout college. I guess you could say they stay committed to convince without compromise. With that being said, Sprouts Farmers Market has a “Plant Based Tastes Great” sale running from 10/31/18 to 11/7/18 and they are offering an additional 35% Off several of the Silk products that are carried in store, so now is your chance to go stock up.
At the innovation lab we learned all about their passion for the environment and commitment to sustainability which in all honestly solidified my love for the company. They actually do a lot of small batch recipe testing in order to reduce unnecessary waste (as seen here)
Being allergic to cows milk products has made me really think outside the box with my cooking and baking. Silk’s line includes cashew, almond and soy milks and all three are wonderful dairy replacements as well as all around additions in several of my recipes. I use all three types of plant-based milks in my coffee and my oats. I also enjoy using the unsweetened almond milk in my savory dishes to replace milk or make them that much creamier.
You will need noodles and some chopped veggies of your choice, I always go for broccoli and roast it on 400 for 10 minutes and mix into the sauce and noodles. Peas are another great addition to this dish if you don’t want broccoli
What you will need for the sauce:
3 - 4 garlic cloves
3 tbs of avocado oil
3 - 4 tbsp of arrowroot flour or all purpose GF flour
2 cups of unsweetened Silk almond milk or plain unsweetened Silk coconut milk
6 tbs nutritional yeast
salt & pepper to taste
1 tsp of garlic powder
Cook any noodle of choice according to package instructions
Add oil and minced garlic cloves a skillet and lightly sauté, reduce the heat
Add GF flour, whisk to avoid lumps and slowly add Silk almond milk a little at a time continuously whisking
Once all of the almond milk is combined and mixture is blended, transfer into a blender add all the other seasonings and ingredients (nutritional yeast, salt, pepper, garlic powder)
Transfer back to skillet and heat on low, whisking continuously. If sauce is too thick add more almond milk in small amounts.
Once sauce is ready, combine with cooked noodles of your choice and roasted or steamed veggies of your choice and enjoy!
