Vegetarian Wraps With Creamy Herbed Dressing (Vegan)

It’s back to school season and I am so excited for some new, easy recipes to share with you. This particular recipe is perfect for vegetarians and vegans. It would make a great work or school lunch since the ingredients keep for a bit without refrigeration. The veggies on this wrap are not limited to the ones I listed. You can use your favorites or whatever you have left in the refrigerator.
This dressing is the perfect topping to just about any sandwich. The crushed herbs make it packed with flavor and a little touch of tahini gives it the creaminess I was craving.
This dressing would make a great mayo substitute. It’s better than mayo and completely vegan. I tried it on these veggies wraps as well as a salad for dressing and it was just what I was craving. The best part about this dressing is that you can add any fresh herbs you have on hand. I highly suggest cilantro and dill. I feel they are delicious together and perfect flavor for a wrap or sandwich.
I used So Delicious® plain coconut yogurt alternative for the base of this dressing and it gave it the perfect tanginess. You only need a little to make 2 – 3 wraps but you may want to double the recipe so you have more dressing to enjoy on other dishes for the week. Creamy Herbed Dressing:
· ¼ C of plain So Delicious® yogurt alternative
· 2 tbs of tahini
· 1 tbs fresh crushed/chopped dill
· 1 tbs fresh crushed/chopped cilantro
· ¼ tsp of garlic
· pinch of salt
Combine all the ingredients with a fork. Be sure to crush/press herbs to release the flavor into the mixture.
Wraps (makes 2 – 3):
· 1 or ½ sliced bell pepper depending on size of pepper (any color works I chose orange and yellow)
· 1/3 C of canned chickpeas
· 2 tbs of spinach
· 2 tbs chopped green onions
· ½ c tbs sliced roasted beets
· ½ Avocado
Spread avocado onto tortillas and divide toppings on to each tortilla. Drizzle Creamy Herbed Dressing on each wrap. Serve and enjoy!
