Strawberry Blueberry Oatmeal Bake

This little oatmeal bake will not only make your house smell wonderful - it will really keep you full throughout the day because it has more protein in it and it's densely delicious (if you can imagine) The bake time may vary a little on this recipe depending on the size of your skillet or ceramic pan and because of the add moisture in the strawberries so stay close to the oven and plan on a little variation in your timing. 

Here's what you need - 

  • 3 C of rolled oats 
  • 1 tsp of cinnamon 
  • Pinch of salt 
  • 2 tsp of baking powder 
  • 1 C of coconut or almond milk
  • 1 tsp of Vanilla extract or liquid stevia 
  • 2 eggs
  • 1/4 C of coconut oil 
  • 1 handful of blueberries (fresh or frozen works)
  • 1/3 C of chopped 
  • 1 over ripe smashed banana (or sweetness and texture)

Mix ingredients well, banana can be a little chunky if you like. Pour into a small greased skillet bake at 350 for 20 to 30 minutes. This bake may take a little longer as I mentioned with all the fruit so keep an eye on it ;)  #sailorbailey
