Pauls Chili (Who is Paul?)

This is my moms recipe and she calls it Pauls Chili, I still have no idea why or who Paul is... and truth be told - she doesn't know either. I will hand it to Paul .. he is the man. This chili is simple, healthy and so versatile because you can change the veggies you add to it with whatever is in season. 


Make sure you have a good hour or more to simmer the flavors together  OR make it in the crockpot on LOW for 8 hours (thank me later for this one) 

What you will need: 

Crock Pot or Dutch oven

  • 1 pound of ground turkey (skip if you are vegetarian! The recipe is great without meat)

  • 1 large chopped onion

  • 2- 15.5 oz cans of red kidney beans

  • 2 - 15.5 oz cans of dark red kidney beans

  • 1 can of black beans

  • (Rince and drain all the beans)

  • 1 28 oz can of peeled Italian- style tomatoes cut up

  • 1 14.5 oz can of stewed tomatoes

  • 2 4 oz cans of diced green chilis

  • 1 chopped jalapeΓ±o (optional)

  • 2 chopped zucchinis

  • 1 package of chopped/sliced mushrooms

  • 1/4 C of chili powder

  • 1 teaspoon of garlic powder (or 4 chopped cloves if you love garlic)

  • 1 teaspoon of dried oregano (crushed with your fingers to liven up the spice)

  • 1/4 teaspoon of crushed red pepper

  • 1/4 teaspoon salt

  • 2 cans of water (use the empty washed bean cans)


  • Heat dutch oven/pot with olive oil. Add onions and garlic cloves

  • add ground turkey meat and lightly brown

  • add all ingredients in order from above

  • simmer on low for at least 1 hour or low setting on crockpot for 6 - 8 hours.

  • Serve and enjoy with fresh cilantro, crushed tortilla chips or cheese.
